Healthy, skinny meals!

Yesterday I was fed up with my cravings! &I feel it's difficult (+ expensive) to cook for one. So I went to my mum's &I cooked for her! I made her chicken tortilla's with green peppers. Great skinny food!
Here is the recipe! (thanks to skinnytaste.com)
You need (4 servings):
  • 16 oz boneless skinless chicken breasts
  • 1 bell pepper, cut into strips
  • 1 poblano chile, cut into strips
  • 1 onion, cut into strips
  • 3 tbsp lime juice
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • ancho chile powder or chipotle chili powder, to taste
  • salt and pepper to taste
  • 2 tsp olive oil
  • 4 low fat, low carb tortillas (La Tortilla Factory)

  • First you squeeze a lime in a bowl, season with chile powder, salt, pepper, garlic and some cumin. Marinate the chicken with this mixture! Grill the ckicken until it's browned, but not hard.Then season the onion and the pepper with salt and pepper and toss with olive oil. Grill them until they are tender (according to the website this takes about 15min, but it took me less). Cut the chicken into slices and combine the two. But them on the tortilla with some toppings of choice (I used some feta-cheese, my mum preferred Greek Yoghurt).

    Shopping for the food, cooking, washing the dishing + a skinny meal is definitly a winning combination to lose some weight!

    Also, when you live alone and you don't have that much time to cook every day (like me), this is a great way to make it work! When you have some time to cook (like on a rainy sunday), prepare a little more: more dishes, more servings. Select recipes that you can easily tripple of dubble. You can also pack your leftovers for lunch! That way, you won't have to fall back on take-out meals that a full of fat (and it will save you some money too!).
